Chef Reveals Secret To Perfectly Crispy Fries

US Chef Dan Kluger has revealed the secret of crispy fries that can be cooked in 20 minutes, reports The Mirror.

Kluger’s instructions for making crispy salt and pepper potatoes do not involve boiling or heating oil. The chef uses young or baby potatoes so that he doesn’t waste time slicing them.

“This technique works best with young potatoes. Their thin skins become crispy. The secret to crispy skins is egg whites,” Kluger said.

He whips the egg whites in a bowl until there is no liquid left and covers whole potatoes with them. Then the cook removes the excess protein, season the potatoes with salt, pepper and any other seasonings and put them in an oven preheated to 200 degrees. The dish takes 20 minutes to cook.

Cooking time may increase slightly if larger potatoes are used. “If you can’t find young potatoes, take the smallest you can find and adjust the cooking time accordingly,” he said.
